Omakase
What Makes an Omakase Dinner Special?
Omakase is more than just a dinner – it is a culinary journey. Each course is carefully created and served in a specific sequence, designed to highlight the flavours, textures, and seasonality of every ingredient.
Unlike a traditional restaurant experience, guests do not choose from a menu. Instead, the menu is crafted by the chef, drawing on years of experience, creativity, and the finest ingredients available at their peak.
Every dinner is unique, reflecting the season, the quality of the ingredients, and the chef’s vision.
The Omakase Philosophy
It is a culinary journey built on trust, where each course is crafted according to seasonality, craftsmanship, and the uniqueness of the moment.
Chef Vaidas Užgerys
Vaidas Užgerys began his professional culinary journey after completing a two-year chef training program. Specialising in Japanese cuisine, he has spent more than 15 years refining his craft and gaining international experience. His exposure to Japan’s culinary culture and the omakase philosophy shaped his approach to food – one built on respect for ingredients, seasonality, and the guest.
Today, he brings these values to life through exceptional omakase dining experiences in Vilnius.
How Does an Omakase Dinner Unfold?
Allergies
Please note that fish, seafood, shellfish, and soy are essential elements of our omakase dining experience.
Due to the nature of our tasting menu, we are currently unable to offer vegetarian, vegan, or completely fish- and seafood-free alternatives.
If you have allergies or other dietary restrictions, we kindly ask that you contact us before making a reservation. While we always do our best to accommodate individual needs, we cannot guarantee the complete absence of allergens or cross-contamination.
Thank you for your understanding.
