Chef Vaidas Užgerys discovered his passion for food from a young age. He first started by helping his mother prepare simple homemade dishes, which led him into the professional kitchen. He then chose to specialize in Asian flavors, particularly honing his skills as a sushi chef. Over time, his desire to improve only grew stronger. A significant step forward was receiving an offer to work in Norway, which he accepted. During his seven years in Scandinavia, he gained knowledge from Michelin chefs such as Roger Asakil Joya and Vladimir Pak, which reinforced his expertise and passion for preparing omakase-style dinners. A new chapter began in 2016 when Chef Vaidas Užgerys was accredited by sensei Masayoshi Kazato and the founder of AJSA (All Japan Sushi Association). That same year, he gained experience in Tokyo by participating in the World Sushi Championship, becoming the first Lithuanian to compete in such a prestigious event. In 2019, Vaidas decided to return to his homeland and became the head chef of “Sushi Masters Vilnius.” In 2022, he started hosting “Omakase by Vaidas Užgerys” tasting dinners, accommodating up to 12 guests. The term “omakase” means “leave everything in the chef’s hands,” so guests only discover what will be served when they arrive for dinner. These 14-course omakase dinners include appetizers, sashimi, and nigiri. The dishes are made using the highest quality local and globally sourced ingredients, combining expressive fusion-style flavors with traditional Japanese techniques.
